Craving something easy, quick, but decadent? Why not try this delicious French camembert beef burger with chilli jam and truffle mayo?
Fancy & affordable
Not everything that sounds fancy must be expensive! As a matter of fact, this French camembert beef burger sounds a lot more expensive than it actually is! Don’t worry, you won’t need to buy any expensive fresh truffles, you can simply use some truffle paste (which contains a tiny amount of truffles mixed in with other mushrooms). You can find the truffle paste in most large supermarkets!
However, I would put a little bit of effort into finding some good quality chilli jam. You don’t want one with a strong vinegar flavour. I made mine, and if you need the recipe, you can use my friend Alex’s – it’s the one that I used! Did I tell you how simple it is to make?
Burger-Travelling Around the World
Remember when I told you that I’ve started a new project where I aim to create burger recipes for all major cuisines in the world? Yes, that’s right, it was when I shared the recipe for this Middle Eastern lamb and halloumi burger. Moving from the Middle East, I headed straight to France. As I’m writing this recipe, I’m waiting for my Italian fennel and red wine burger patties to be ready to become my dinner. Yes, I am travelling the world, one burger at a time! I’ve built a great list full of ideas, so stay tuned for some #burgerlove!
Le Français
While I avoided stereotypical ingredients such as foie gras (because I couldn’t find any and it’s not exactly the ingredient we all have in our pantry), I couldn’t stay away from camembert. To make it more exciting and give it a kick, I decided to top the camembert with some super tasty chilli jam, which I think works wonderfully with any good cheese! I seasoned the meat with Dijon mustard, rose pepper and tried to keep the ingredients simple and approachable. However, I couldn’t avoid adding a bit of Armagnac to make the meat more tender and aromatic!
As a matter of fact, this is a recipe that I’ve tried a good couple of times – with truffle mayo, without, with brie, with camembert, without any cheese, with venison instead of beef. It’s always been good, but the one I’ve posted here was by far the best. So, go get some good beef and start cooking!
The recipe

To prepare the patties, place all ingredients to a bowl. Mix until everything is combined. However, keep in mind that overmixing ruins the texture of a good burger patty!
Form the patties and set aside for at least 5 minute.
Heat a grill pan and melt the butter. Once very hot, place the burger patties and cook for 5 minutes on one side, and 4 on the other.
When turning the patties, add the camembert on top so it has time to melt. Add the buns and let toast until golden brown.
Add the truffle paste to the mayo and mix.
Remove from heat and plate: the lower bun half, truffle mayo, the patty with the cheese, chilli jam, some salad leaves and the upper bun.
Serve immediately!
