I still haven’t decided what I wish to call my challenge. Around the world in [insert number here] burgers? Burgers around the world? BurgerTravelling? #BurgerLove for sure. And thus continues my adventure to taste the world one burger at a time.
With spring here, I’m really looking forward to finally being able to barbecue more, especially some of these tasty burgers that I keep coming up with. I’ve got so many lined up, there will be plenty of surprises for the burger-lover within you!
New adventures, new beginnings
Have I told you that I’m moving soon? My adventures don’t only revolve around burger making and my time in Edinburgh has come to an end. As a matter of fact, I’ve only got a couple of weeks to spend in my lovely Edinburgh flat and my lovely bright, large kitchen before I return to Romania for a couple of months, and embark on an unknown adventure this coming autumn. As I was editing the pictures for this recipe I was struck by the thought that I should be enjoying Scottish produce as much as possible before I leave.
Scotland forever
I mean, where else can I find premium Scottish venison, so fresh that you can turn it into a delicious tartare!? Funnily enough, I’m not so sad about haggis, as I wish to turn it into a yearly cooking challenge, to keep the spirit alive. Don’t be surprised if you read about my future Burn’s Night Dinners and my (probably failed) attempt at teaching my friends Ceilidh (by watching how to videos on YouTube). I’ll also miss scallops, the fresh oysters that I can buy for 80p per piece from Eddie’s Fishmonger. I’ll also miss the lovely people who run this great fish shop, who are always friendly and helpful and provide me with the best recommendations and products…
But anyway, this entire article looks like I’m writing about a Scottish burger instead of an Italian one. I guess it’s been a while since I travelled to Italy. But I do quite often, in my mind as well as through their wines, salamis and cheese.

The recipe
This is an extremely simple recipe that will make a delicious Italian burger with mozzarella, pesto and roasted red peppers.
To prepare the patties, place all ingredients to a bowl. Mix until everything is combined. However, keep in mind that over-mixing ruins the texture of a good burger patty!
Form the patties and set aside for at least 5 minute.
Heat a grill pan and melt the butter. Once very hot, place the burger patties and cook for 5 minutes on one side, and 4 on the other.
When turning the patties, add the mozzarella on top so it has time to melt. Add the buns and let toast until golden brown.
Add pesto to the lower bun. Place the patty, add the roasted red pepper, rocket salad and the top half of the bun. Serve immediately!
