This super tasty lamb burger with halloumi and green herb sauce are a perfect solution for a super gourmet lunch or dinner. The meat is flavoured with Oriental spices, pomegranate molasses and dried barberries and is served on a bed of hummus and peppery rocket and topped with halloumi, a delicious mint, coriander and parsley green herb sauce and crushed pistachios. What’s not to love?

Ingredients
For the patties
  • 250 g lamb mince
  • 250 g beef mince
  • 1 tbsp pomegranate molasses
  • 1/2 red onion finely chopped
  • 1 tbsp baharat
  • 1 tbsp sumac
  • 1 tbsp olive oil
  • 50 g hard gingerbread ground
  • 2 tbsp dried barberries optional
  • 2 tsp salt
For the herbal sauce
  • 1 handful parsley
  • 1 handful fresh coriander
  • 1 handful fresh mint
  • 4 tbsp yogurt
  • 1 tbsp tamarind paste
  • 1 tbsp olive oil
  • 1 tbsp pine nuts dry toasted
  • 1/2 lemon juiced
Other ingredients
  • 4 tbsp red wine
  • 1 large handful arugula
  • 250 g halloumi cut in 4 large but thin slices
  • 250 g hummus
  • 1 small handful pistachios lightly crushed
  • 4 brioche buns
Instructions
For the patties
  1. Start by preparing the meat marinade. The secret to a burger is not over-mixing, thus destroying the texture of the ground meat. Add all ingredients to a bowl and only mix then, lightly and with care. Form the burger patties and refrigerate for at least 20 minutes. 

  2. Heat a grill-pan. Add the burger once it’s very hot. Drizzle the red wine on it – it will give the meat a nice aroma and help it cook better. Grill for 5 minutes on one side, and another 4 on the other side. Do not press the patties or move them around the pan. 

  3. In the last two minutes, add the bun halves to the pan to make them slightly crispy. 

For the rest
  1. While waiting for the meat to marinate, you can prepare the sauce. Add everything to a blender and purée. Set aside.

  2. Grill the halloumi until it becomes golden on each side. 

  3. Finally, assemble the burger: the bottom half of the bun, hummus, arugula, the meat patty, green herb sauce, halloumi, crushed pistachios and the top half of the bun.
