French Camembert Beef Burger with Chilli Jam and Truffle Mayo

For the patties
  • 500 g beef (good quality and fresh)
  • 1 splash Armagnac (or Cognac)
  • 1 tbsp Dijon mustard
  • 1 tbsp rose pepper (lightly crushed)
  • 2 tsp marjoram
  • 1 tbsp dried sage
  • 2 tsp garlic powder
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • 2 tsp salt
Other ingredients
  • 4 burger buns
  • 100 g camembert sliced
  • 4 tbsp chilli jam
  • 4 tbsp light mayo
  • 2 tbsp truffle past
  • 25 g butter
For the burger patties
  1. To prepare the patties, place all ingredients to a bowl. Mix until everything is combined. However, keep in mind that overmixing ruins the texture of a good burger patty!

    Form the patties and set aside for at least 5 minute. 

  2. Heat a grill pan and melt the butter. Once very hot, place the burger patties and cook for 5 minutes on one side, and 4 on the other. 

  3. When turning the patties, add the camembert on top so it has time to melt. Add the buns and let toast until golden brown. 

For the rest
  1. Add the truffle paste to the mayo and mix. 

  2. Remove from heat and plate: the lower bun half, truffle mayo, the patty with the cheese, chilli jam, some salad leaves and the upper bun. 

  3. Serve immediately!
