This is a super tasty and healthy no cook beet and bean spread (or dip) that is ready in less than 5 minutes. It’s great on toast, it’s great on pita, it’s a great starter, a great breakfast. Have I added how pretty it is?
Me and my obsessions
Have I told you I am a lover of all middle eastern dips, spreads and salads? Hummus is my number one comfort food, since it only takes me 5 minutes to make it and it’s so tasty. I’ve been perfecting mu hummus and my moutabal for a while now, but they were not quite satisfying my colourmaniac senses. I came up with this dip quite randomly, as I had ordered beets to caramelise them and have them with feta and hummus. However, I was running out of time and I was really tired as well, so I decided to make things simpler.
All you need is… a blender
I have to admit I’m not such a massive fan of beetroots. I cannot manage to get used to their earthy sweetness. However I had to find a way to consume them a bit more since they’re such beautiful and healthy veggies . In my slight panic moment I googled whether beets can be consumed raw (yes, they can). Finally I decided to try my best. I threw a peeled beet and a can of white beans (that I had lying around for ages) into my blender. I got a very beautiful magenta paste that tasted of beetroot and beans. It wasn’t very exciting, just pretty. But I like to believe I am a queen of spices and herbs, so I decided to add a ton of mint and some cinnamon to the paste. It turned out super tasty!
Pink, it’s my new obsession
Beets are thought to prevent cancer among others. They are one of the healthiest superfoods out there. I was really happy to finally find a way to have beets, and what a way! Now this beautiful spread has joined my multitude of middle-eastern tasting starters.
- 1 large beet, peeled
- 1 can of white beans
- 1 garlic clove
- 1 tbsp olive oil
- Juice from 1/2 lime
- 1 tbsp mint
- 1 tsp cinnamon
- a small handful of crushed pistachios
- Simply put all the ingredients in a blender or a food processor and purée until you obtain a smooth paste.
- Sprinkle some pistachios on top and enjoy!
