This mint and pistachio hummus is ready in 10 minutes, is light, and the perfect choice if you’re bored of the classic hummus and wish to try something new. Have I convinced you? It also has no oil, is very light and super tasty. What about now? 🙂 It’s also a great starter, but can be enjoyed on some fresh pita in the morning, or as a snack whenever you get hungry. Now?
Cooking time: 10 minutes
Makes one bowl of hummus
- 1 can of chickpeas (400g) – keep 1 tbsp of brine!
- 1/2 tbsp tahini
- 1 handful of pistachios (roasted, salted and peeled)
- 1 handful of fresh mint
- Juice from 1/2 lemon
- 1/2 tsp ground cumin
- 1/2 tsp sumac
- You can imagine how easy and quick this recipe is. Basically, there’s one step to it and the hummus is ready for devouring. Add all ingredients to a bowl. Don’t throw away all the water from the chickpeas, but add 1 tbsp of it to the bowl. Now purée all ingredients together.
- I like having chunks of pistachio to bite into with the hummus, so I usually keep some on the side and only mix them in at the very end.
