How about a light(er) no cook cheesecake that can be ready in 20 minutes? This is it! It’s not very sweet, but instead, it is refreshing. It is perfect for when you have some unexpected guests and would like to quickly prepare something nice and tasty.
Personally I am not a fan of very sweet desserts. As a matter of fact, you can probably notice from the lack of dessert recipes on this blog that I don’t normally cook sweets very often. But when I do, I try to make them light(er) and not too sweet.
Cooking time: approx. 20 min
(For 5 servings)
1 tbsp butter
7 digestive biscuits
125 g cream cheese
1/4 cup icing sugar
1/2 tsp lime zest
1/4 tsp vanilla essence
1/2 kiwi (cut in small cubes)
1 kiwi (sliced)
Juice from 1 lime
Grind the digestive biscuits with a mortar and pestle until they break apart completely and turn into a fine powder. Add the butter and mix well. This is the base of the cheesecake, so spread it in the tray or glasses you will use to serve the cheesecake.
Slice 1 kiwi thinly and add the slices on top of the cheesecake base.
For the filling, mix cream cheese, mascarpone and icing sugar in a bowl. Add the lime zest, vanilla essence, lime juice and 1/2 kiwi cut in very small cubes and mix well.
Add the filling to the base and decorate with some extra lime zest. Keep it in the fridge for at least 1h.
One cheesecake serving contains approx. 270kcal.
