This is a very easy and very tasty Masala Chai recipe that you can make on the spot, or prepare in advance and use it when you need it.
I will choose spiced tea over any other tea. This is the perfect blend of flavours that wake you up, give you a kick and cuddle your taste buds at the same time.
Cooking time: approx. 15 minutes
(for 85g of tea mix)[shopeat_ingredients]30g ceylon black tea
2 tbsp cardamom pods
1 1/2 star anise
1 tbsp fennel seeds
1 tsp allspice berries
1 ceylon cinnamon stick
1 tbsp cloves
1 tbsp black pepper
Take a mortar and pestle and grind the spices enough for them to break into pieces, without turning them into a powder. This will make them release the maximum flavour.
For the quick version (which is what I always do), mix the spices with the black tea and store it in an airtight container. Use about 1 and a half tsp of the mix for 250ml of tea.
If you have more time and patience, store the spice mix and the tea separately. When you wish to make tea, infuse the spices for 10-15 minutes in boiling water, after which add the black tea and keep it in for 3-4 minutes. Add about 1 tsp of the spice mix and 1 tsp of the black tea for 250ml of tea.
Serve it with a bit of honey and a splash of milk and enjoy!
