Do you remember this new Salmon challenge of mine? Need a reminder?
How many different sauces can I make, with a few ingredients that I mix in a glass and prepare in maximum 5 minutes?
This is the perfect challenge. It takes no time, and I need to preparation – I just use products I find at home and in my spice cupboard, mix them and try it out. I usually have this salmon with rocket salad, and if I have a bit more time, I chop some tomatoes and green onions and add them to the rocket as well. I season it with a bit of olive oil and lemon juice, and that’s it!
It takes 5 minutes to prepare the sauce, after which I add it to the salmon and cook it for 20 minutes in the oven, which is a time I can use to do anything else. So, overall, it actually takes a lot longer to eat the salmon than to actually prepare it!
Should I repeat that?
Cooking time: 5 minutes (preparation), 20 minutes (waiting time)
The second recipe I am sharing with you is one of my recent favourites: coffee and cardamom. The mix is absolutely delicious. My friend Anne cooked salmon with coffee and cardamom and that was when I discovered this great mix of ingredients. I simplified the recipe to the aim of my challenge, and this is what I got!
(for 1 serving)
1 piece of salmon fillet
10 cardamom pods
1 tsp good quality coffee
Juice from 1/2 lemon
1/2 tsp black pepper
1/2 tsp sea salt
1 tsp olive oil
Preheat the oven at 180°C.
Remove the seeds from the cardamom pods and grind them in a mortar and pestle. It is important for them to be freshly ground in order to have an intense flavour.
Add the coffee, pepper, salt, ground cardamom and olive oil to a glass. Stir well.
Put the salmon in an ovenproof dish and coat it well with the sauce. Cover it with aluminium foil.
Cook for about 20 minutes, until the fish is done through.
